How many foreign currencies of the world are there? 

There are currently 180 different foreign currencies recognized by the UN. However, the number of unofficial currencies numbers far higher, which can include privately issued currencies and crypto-currency like Bitcoin. This list only includes official foreign currencies. 

Why isn't there a one world currency? 

Finance and economics is a complicated and nuanced subject, but currencies are a reflection of the relative wealth of a nation and its economy. It can be extremely difficult to coordinate a single currency between different economies with extremely varied characteristics. Even within the Eurozone, differences between northern and southern economies almost caused the system to break apart during the European debt crisis.
